NAMOURA - Sweet dish made from Semolina, flavours of Orange blossom & Rose water
Namoura is a traditional dessert, with Middle Eastern flavours like rose water and orange blossom water.
Serves: 4-6 people
INGREDIENTS:
2 cups Semolina
1/2 cup Butter
2-3 tbsp Yogurt plain
2 tsp Baking powder
1 tbsp Orange Blossom
1 tbsp Rosewater
sugar - water 2:1 ratio
1 tbsp Tahini to coat the baking tray
10-12 blanched Almonds
METHOD FOR NAMOURA:
Pre-heat oven to 350 degrees
In a large bowl, mix together all ingredients except almonds.
Spread the tahini on the bottom and sides of a 14-15 inch pan to prevent sticking.
Pour the Namoura mix in the pan and smooth the top.
Leave aside for atleast 1 hour.
Before you bake the cake, with a watered knife, cut the namoura with evenly spaced lines to create square or diamond shaped pieces
Decorate each square with a blanched almond
Bake the Namoura in preheated oven until cake is firm golden colour.
METHOD FOR Sugar Syrup:
Boil together sugar and water.
Add rose water and orange blossom water just before you turn off the heat
Cool the sugar syrup completely.
Pour the cooled sugar syrup all over the hot Namoura cake. Preferably not all the syrup at once, let the cake absorb it then repeat. Sweet dish for any time of the day.
