SWEETCORN & TOFU WRAPS - eat your colours, healthy corn wraps
Makes approx 12 rolls
INGREDIENTS:
1 cup Sweetcorn (Boiled)
100gm Tofu (firm texture) diced into small cubes
2 large green Capsicum finely chopped
2 large onions finely chopped
3-5 curry leaves
fresh coriander chopped
2-3 green chillies finely chopped
shredded lettuce (optional)
1 tsp cumin
1/2 tsp turmeric
1- 2 tsp Garam masala
1 tsp Amchur powder
Salt and black pepper to your taste
2 tbs Butter
12 Wraps of your choice white/corn/wholemeal
METHOD:
Heat butter in pan, add the cumin and curry leaves allow it to sizzle before adding the onions and chillies.
Add the sweetcorn and all the spices, coriander and then stir in the tofu last and saute for approximately 2-3 minutes.
Prepare wraps by spooning Sweetcorn and Tofu mixture in the middle of the wrap add shredded lettuce (optional) and make a roll or fold as you prefer.
