FASTING PEANUT KADHI - tasty spiced yogurt without any flour, tastes delicious with faraar khichdi
Serves 4
INGREDIENTS:
1 cup Plain yogurt whisked with 2 cups water
4 tbsp Peanuts roasted and crushed
1 tsp Ghee
1 tsp Cumin
6-8 Curry leaves
1 tbsp Ginger and chilli paste (as per your taste)
Salt to taste
Coriander for garnishing
METHOD:
In a pan heat ghee and add cumin seeds when they crackle add curry leaves and yogurt mixture.
Stir continuously add the peanuts, ginger and chilli paste, salt to taste.
You need to stir for 6-8 minutes until it begins to thicken or longer if you like a thicker consistency.
Garnish with coriander and serve hot.
