KHEER - infused with saffron & cardamom

Kheer is an Indian rice pudding loved by all generations in the family, you can vary it by adding dry fruits, different spices, saffron and even essence's like rose and vanilla. Perfect to serve at festivals and simply as a dessert!



Serves 4


INGREDIENTS:


1/4 cup Risotto rice (wash and soak)

4 cups/1 litre Gold top full cream milk

1/2 cup Sugar

1-2 tsp Saffron (dissolve in a little warm milk to enhance the colour in the milk)

1/2 tsp Cardamom

1/4 tsp Nutmeg

Almonds blanched and slivered (optional)

Raisins as per taste (optional)



METHOD:


  1. Heat the milk in a heavy pan, drain water from soaked rice and add it to the milk.

  2. Simmer on low flame and stir occasionally

  3. When the rice is cooked the milk should also thicken.

  4. Add sugar, saffron, cardamom, if you are adding raisins and other spices this is when you you would add it.

  5. Continuously stir until the sugar dissolves.

  6. Kheer can be served chilled or hot.Serve in individual bowls and garnish with your choice of saffron, almonds. pistachios, rose petals.
