MATOKI CURRY - EAST AFRICA GREEN BANANAS COOKED IN CHAASH & PEANUTS BEST SERVED WITH POORI
SERVES 6
INGREDIENTS:
6-8 Matoki (Green African Bananas)
1 cup Peanuts dry roasted and crushed
6 tbsp of plain yogurt add water to make a medium consistency chaash
2 Onions finely chopped
5-6 Garlic cloves finely chopped
3-4 Green chillies chopped finely
Handful of Corriander chopped
Salt to taste
1/2 tsp Turmeric
1/2 tsp Red chilli powder

2 tbsp Oil
METHOD:
Peel and cut the matoki, make 4 slits into the banana at the top and cut diagonally needs to be 1/2 cm thick pieces, keep in a pan with water until ready to use.
Place oil in a pan when hot add the onions and cook until transparent, add the garlic and cook for a further 2 minutes. Drain water from the matoki and put this in the pan and stir.
Add a little water and allow the matoki to cook on low heat.
When almost cooked add the roasted peanuts stir and then gently add the chaash and stir continuously for further 5 minutes.
Add salt, turmeric, chilli powder, chopped coriander and simmer until the matoki is cooked.
Before serving check the consistency if it has gone thick you need to add a little water.
Serve hot garnished with chopped coriander and serve with poori or rice.
